Get your salmon on, yo!

Let's cut to the chase. Most of us find ourselves overworked and tired by the end of the day. We deeply desire to eat well, but in our fatigued state, we often choose what's 'easy' and not always what is best for us. Don't fret, I'm here to help! I am a lover of wild caught, Alaskan salmon. The below recipe from "Real Simple" is, well, real simple. To make it even simpler, I buy the frozen Alaskan Salmon filets from Costco. Ta-da! Also, feel free to use red or fingerling potatoes instead of Yukon Gold taters. OR, swap out the potatoes with your favorite hearty veggie instead! I like to experiment and change up recipes as a form of creativity and use what I already in the fridge. It also never hurts to pair this dish with your favorite dry rose, chardonnay or pinot noir. Sipping vino while cooking and listening to your favorite tunes is highly encouraged! Bon Appetit!
